Corn is a vegetable originally from the Americas that is used to prepare a great many dishes. It is greatly valued in the cuisines of Central America, South America, and Africa; where the people there eat it daily. In Mexico alone it is used as a base for more than 600 dishes!

It is known by many other names, among them elote, mazorca, choclo, and jojoto. It can be eaten grilled, toasted, boiled, or in brine; or it can be used to make popcorn, flours, tortillas, drinks, among others.

  4. Corn is a domesticated plant originally from Central America. It is believed that it was cultivated by the Mesoamerican peoples of the central region of Mexico more than 10 thousand years ago.
  5. The largest corn producers in the world are the United States, China, Brazil, and Argentina. They are followed by Ukraine, Indonesia, India, and Mexico.
  6. There are more than 200 types of corn! Of which an estimated 64 are of Mexican origin. The most popular varieties are sweet corn, dent corn, flint corn, flour corn, waxy corn, opaque corn, popcorn, and baby corn.
  7. Did you know that corn is a gluten-free food? Even so, there are studies that suggest it is not “completely safe” for people with celiac disease.
  8. Although corn's greatest nutritional contribution comes from carbohydrates, it also contains fiber, proteins, potassium, folic acid, flavonoids, vitamin A, vitamin B1, vitamin C, and vitamin E.
  9. How many kernels do you think there are on an ear of corn? Did you say 200? Maybe 500? The truth is that a large ear can contain between 700 and more than 1,000 kernels!
  10. Corn has antioxidant, anticancer, and digestive properties. In addition, it boosts metabolism and satiety and helps fight anemia, constipation, kidney stones, stress, and stomach aches.
